And similar to apple cider vinegar, this does include some of the mother.The flavor profile on this is SHARP. This vinegar has a slightly higher acetic acid content (about 7%) than most other fruit-based vinegars (about 5%.) You do get some sweetness and flavor of the watermelon, but the acid from the vinegar is sharp.I have tried this one spritzed on fresh fruit (peaches and melons), put just a dash in drinks to add brightness, and as a marinade ingredient for cooking chicken.Used to make salad dressings, slaws, marinades, to cook chicken, or whatever else your imagination tells you to do with it.Since it does include sugar, I would NOT recommend cleaning with it.I make my vinegars in very small batches and have them tested in a lab prior to selling.All of my vinegars test at a minimum or 5% Acetic Acid
